Who knew Bacon & Eggs could get better?

Yesterday was my husbands birthday and 2 of his favorite foods are Bacon and Eggs.  He loves, loves, LOVES deviled eggs and egg salad almost more than anything so I decided to combine the two and see how it worked.  Let's just say not only did my husband think it was the best birthday ever, I even ate the egg salad and can't stand that stuff!  

Bacon Deviled Eggs

Ingredients:
18 eggs
Mayo or Miracle Whip
Sweet relish
Finely Chopped Onion
Mustard 
1 Pound Crispy Bacon Chopped Up 

(all stuff everyone has on hand so no need to even run to the store.  If you don't have Sweet Relish, Dill is fine)



Because he's not the only one who was going to eat them (my kids are addicted to deviled eggs too!  LOL), I used 18 eggs.  You can hard boil them however you want but my trick is to put them in the pot, cover them with about an inch of cold water and bring them to a boil.  Cover them with a lid and  put the the side for 15 minutes.  Works for me every time.  Some do this and leave them on the heat, some even cook them in the oven (I've done this and it works well!).  Anyway you choose, make sure the eggs are boiled through.  

 Peel them and rinse them all off.
Cut them in half and place the yolks in a bowl and the whites on a platter.














Chop up your bacon and put it in the bowl.  I don't know about YOUR family, but mine can't get enough bacon so there is probably actually more than a pound in my deviled eggs but others might not (though I don't know how you can't!)  


 My yolks went on top of this bacon.  Now this is the part I love about cooking, I add until it tastes good.  I use the large spoon from my silverware drawer, not the cereal one but the one that's just bigger, and put 2 scoops of Miracle Whip, one spoon full of mustard, a spoon full of sweet relish, and onion to taste.  I mashed everything up and stirred until it was smooth-ish.  

Instead of struggling with a bag with a tip, I just cut the tip off a gallon baggy and squeezed it out into the empty eggs.  


 Now, bacon and eggs is good, but what could make it better?  CHEESE!!!!  Talk about kicking it up!  It just pushed them over the top! 


 I boiled extra eggs, about 8 because my husband is the only one who likes egg salad.  Instead of slicing them in half, I diced them into chunks and threw all the same ingredients in a bowl, keeping the same amount of Miracle Whip so it will be smooth and creamy.  Like I said before, my husband is the only one who likes egg salad but I had to put a lid on this and get rid of my spoon so I would stop eating this!!  



 It's true, BACON makes EVERYTHING BETTER!!!  We only have about 8 left and I made them at 5 last night.  I had to lock them down so my husband would have some left!  I LOVE good food!
